100g or heaped cup Rooibos Tea

thumb size piece fresh ginger

tbsp cloves

tbsp star anise

tbsp cardamom pods

cinnamon bark

tbsp fennel seeds

tbsp mixed spices- nutmeg/cinnamon/vanilla powder


Pestle and mortar the whole seeds, barks and spices. Grate the ginger and mix with the rooibos. Mix all together with a cup of hot water to activate the spices. If you like more of one spice or not so keen on another, just play around and find the ratios that suit your tastes 🙂 Put in a glass jar and store in the fridge.

Cup of Chai Time!

Boil up a water with a tablespoon or two of the mix and then add a teaspoon of honey and some milk of your choice. Pour through a tea strainer into your cup and sit back and enjoy a hug in a mug!
